The golden cayenne is slightly hotter than the red cayenne with a similar taste. It starts out lime green in color and matures to a bright yellow color. When dried the yellow turns to a rich golden color. Use golden cayenne powder when you want the heat and flavor of a cayenne but do not want the traditional red cayenne color.
