Kohlrabi

Kohlrabi is a relatively unknown vegetable with mild flavor and the texture of a juicy radish or apple. Its name means cabbage (kohl) turnip (rabi) – referring to both its botanical family (brassica, like cabbage) and appearance. However, the edible portion of kohlrabi is not the root, as one might think, but the round, swollen stem of the plant.
