The Guajillo is the workhorse of Mexican cuisine, the most widely used dried chile in the country and the backbone of traditional red sauces, moles, enchilada sauce, and birria. Wayland Chiles grows these seeds on our small family farm in Florida, hand-selecting and packing every packet. Grow your own and discover why professional chefs reach for the Guajillo first.

The Guajillo is one of the most important chiles in Mexican cooking, rich and slightly fruity with a smooth moderate heat and a deep burgundy color when dried. The foundation of countless traditional red sauces, moles, and marinades. Difficult to find fresh outside specialty markets, making it one of the most rewarding chiles you can grow at home.

  • Pods grow 4-6 inches long and 1 inch wide on upright plants reaching 24-36 inches tall. Pendant orientation. Matures from green to deep red in approximately 80-85 days from transplant. Sets fruit prolifically throughout the season.
  • Fruit color: matures from green to deep burgundy red. Thin to medium walls ideal for drying whole. Heat level: approximately 2,500-5,000 SHU, mild to medium with a tannic, slightly fruity flavor profile.

CARE INSTRUCTIONS Start seeds indoors 8-10 weeks before last frost. Sow 1/4 inch deep at 80-85F. In zones 3-6 start indoors February-March, transplant after frost. In zones 7-11 start indoors late winter or direct sow after frost. Keep soil evenly moist, fertilize every 2-3 weeks. Use black plastic mulch in short-season climates to extend the growing season.
